Crepes Cake

… here I am again, this time back from Trieste, where I’ve been to the Olio Capitale fair: I do love fairs! This is my father’s birthday cake, made on Wednesday evening before to leave to Trieste: it is based on a Cavoletto’s recipe that I used to keep here, waiting to find the right moment to try it!
My daddy has therefore celebrated his birthday with a ricotta cheese and chocolate crepes cake.


Ingredients:
For the pancakes:
plain flour, 160 gr
eggs, 8
milk, 320 ml
fiorello cheese, 200gr
orange zest, 2 tablespoons
vanilla extract, 1 teaspoon
icing sugar, 40gr

For the filling:
ricotta cheese, 500gr
icing sugar, 100gr
orange zest, 2 tablespoons
vanilla extract, 1 teaspoon
dark chocolate, 100 gr

Pancakes. Whip together all the ingredients, whisking well until it’s smooth. Butter a little (about 20cm in diameter) non-stick frying pan, add a small ladleful of batter: when the underside is slightly golden, flip the pancake over and fry until the new underside is golden. Keep the pancakes aside: the batter makes about 20 pancakes.
The filling. Whip together the ricotta cheese, the vanilla extract and the orange zest. Chop the dark chocolate in small pieces and add it to the ricotta cheese cream.
Assemblage. Spread the ricotta cheese cream over a pancake, put a new pancake over the first one and keep on doing so until you have finished all the pancakes and the cream. Keep in the fridge for at least 2 hours, so that the crepes cake can settle down: it would be far more easy to slice! Serve with a scattering of icing sugar.
