These tartlets are for those who are still excited at the idea of waking up on the day of their birthday or on Christmas morning, not only for the gifts but to feel special, a bit more special than yesterday. These are for those who sniff the just bought books because they have the same scent of the back to school days, which wasn’t so bad since it meant friends and reassuring routine.

These tartlets are for those who still want to start the day with a smile, despite everything, despite the heat, the cold, the rain or the wind, despite the heavy work or the work that is missing, despite the problems the invariably would show up as soon as you open the front door of the house or the mailbox.

I believe that age is barely a matter of point of view, very relative. It really depends on the spirit with which we face the day. There will be problems, difficulties, hard times. I don’t want to deny it since I am optimistic, not a fool. Everything depends on the way you face life, the energy, the inner smile… this makes a huge difference, just like these tartlets can make.

These tartlets are bursting with summer joy, juicy nectarines, refreshing lemon zest and a subtle lavender smell that brings you on holidays, with your hands tucked into lilac bushes, a long linen summer dress and a large straw hat, that would suite you perfectly in your dreams. Fresh peach tartlets

Ingredients
  

For the pastry shells:

  • 150 g of raw cane sugar
  • 150 g of butter at room temperature
  • 1 free range egg
  • 300 g whole spelt flour
  • 1 pinch of salt

To fill the tartlets:

  • 8 ripe nectarines
  • 8 tablespoons of raw cane sugar
  • 2 sprigs of lavender
  • Zest of 1 organic lemon

Instructions
 

  • Rub the butter with the raw cane sugar with the tip of your fingers.
  • Mix in the beaten egg. Sift the spelt flour with salt, then rub it into the dough.
  • Knead into a ball, flatten it a little bit, wrap in cling film and let it rest in the fridge while you're making the filling.
  • Heat oven to 180°C.
  • Peel the nectarines, dice them and simmer in a saucepan with raw cane sugar, lemon zest and lavender. Simmer for about ten minutes over low heat, until soft and almost melting.
  • Remove the pastry from the fridge and roll out on a floured surface with a rolling pin.
  • Butter and flour 8 10cm wide tartlet moulds and line them with the pastry dough, spoon the peaches into the pastry cases and decorate with a lattice top.
  • Bake the tartlets for about 25 minutes, until golden brown.
