French beans preserved in oil

Author Giulia

  • 800 g of fresh French beans
  • 1,5 l of water
  • 500 ml of white wine vinegar
  • Coarse salt
  • Extra virgin olive oil or organic seed oil
  • Garlic cloves
  • Black peppercorns
  • Bay leaves

  • Clean the French beans, break off the tips and draw the broken tips down along the seam to remove the tough fiber that may be present.
  • Fill a pot with water and white wine vinegar, add a few teaspoons of coarse salt and when it starts boiling throw in the beans.
  • Let them cook for about 20 minutes until tender but al dente.
  • Drain the French beans, rinse them under cold water to stop the cooking and arrange them on a kitchen towel to dry them thoroughly before putting them into the jar.
  • Arrange them standing in a sterilized glass jar, add a few cloves of garlic, one or two bay leaves and a teaspoon of black peppercorns.
  • Fill the jar with olive oil, making sure that the beans are completely covered.
  • Close the jar and place it in a cool and dry place, in your pantry for example. Let it sit for at least a month before eating.
